First off, I'm still on Mojave, though I've spent plenty of time working in Catalina. In my area -- music/audio/DAW -- the many issues with Catalina have mostly settled down by now [it's been out a lot longer than 3 months], though there are still Catalina-specific problems here & there.
Of course, when you first update to Catalina, you may still have to update a lot of applications and plug-ins, and you'll lose access to any older 32-bit applications (like QT7), but most developers have long-since addressed any routine incompatibilities.
I can't say how it is specifically for Adobe products, so you'll want to do your due diligence there before jumping in.
And of course be sure to have a full, up-to-date bootable (mirror-image) backup at the ready just in case..
